Grapes : 70% Corvina, 20% Corvinone, 10% Rondinella
Vineyards : Selected vineyards in a hilly area at 150-300 metres above sea level in Valpolicella
Vinification : After withering in the larder until December, the grapes are pressed and destemmed before maceration with fermentation for around 15/20 days at a controlled temperature of 19/22° C
Maturation : The wine matures in French and American oak barrels (20-40 hectolitres) for 12/18 months
Colour : Intense red with garnet hues on maturation
Aromas : Strong notes of cherry jam are combined with the typical notes of dried fruit to create a large and complex boquet, enriched with sweet spicy notes such as licorice and vanilla
Taste : A wine with remarkable structure while maintaining excellent balance between the tannins and softness
Temperature : Uncork an hour before serving. Temperature 18 - 20° C
