SOIL : Both grapes are sourced in the South of the Languedoc-Roussillon from an area between Beziers and Carcassonne. Dry, rather cool climate in summer.
Viognier grapes are grown on limestone soils with pebbles, Chardonnay grapes are grown on stony limestone soils.
VINIFICATION : Hand harvested, both grape varieties are gently pressed and vinified independently.
The fermentation is made in stainless steel vats at low temperature to keep as much fruit as possible.
Aged on the lies till the end of winter before being racked in vats.
We then blend the two wines.
TASTING NOTES : This wine has a nice golden colour with green tints.
It offers praline and buttery notes, crystallized lemon and orange peel aromas in a very long and round palate.
First nose is very aromatic, thanks to the Viognier which brings dried apricot, banana and pear notes.
Then, come the subtle floral notes (white flowers, acacia) from the Chardonnay with citrus hints, pineapple and a slight touch of oak.
The round attack on the palate is followed by a long persistent fresh finish with fruity notes.
FOOD & WINE : This wine is aromatic, easy to drink as an aperitif and with Mediterranean cuisine, salads, snacks and pizzas.
It also matches with seafood, as scallops, lobster or monkfish.
Serve at 12°C.
